Choco Lava Cake




Cooking Time : 35-40 minutes          Preparation Time: 30-35 minutes

Ingredients
  • Cocoa powder                                                       6 tbsp
  • Caster sugar                                                          3/4 cup     
  • Refined flour (Maida)                                             2 cups      
  • Baking powder                                                       1 tbsp
  • Baking Soda                                                          1 tbsp      
  • Curd                                                                      1 cup
  • Milk                                                                        1 cup
  • Vanilla essence                                                     few drops
  • White butter                                                          3/4 cup  
  • Chocolate chips                                                    1/4 cup
  • Cherry filling                                                          1/4 cup

Method :

Preheat oven to 180*C. Mix the chocolate chips with cherry filling and keep aside.Take one bowl add refined flour,baking powder,baking soda & cocoa powder together and keep aside.

Take another bowl and add butter,curd,caster sugar & vanilla essence and mix it smoothly. Now add flour mixture in the bowl and add milk slowly slowly and Mix gently to a smooth batter.

Pour into greased muffin modules and add spoon chocolate chips with cherry filling mixer in the center and back for 7-8 minutes.

Take the module out the oven and let them cool slightly. Remove from the modules and serve hot.

Paneer Chilli Gravy

This ever popular chinese dish is really easy to make. Deep fry paneer pieces in capsicum flavored gravy.

Ingredients :


  • Paneer                                                                       200 grams
  • Cornflour                                                                   3 tablespoons
  • Oil                                                                              to deep fry
Gravy :
  • Cabbage , chopped                                                    3 tablespoons
  • Carrot , chopped                                                       3 tablespoons
  • Capsicum , chopped                                                  2 tablespoons
  • Ginger paste                                                              1 tablespoon
  • Garlic paste                                                               1 tablespoon
  • Green chilli , chopped                                                1 tablespoon
  • Soy sauce                                                                1 1/2 tablespoons
  • Vegetable stock                                                         2 cups
  • Spring onion , finely chopped                                      3 tablespoons
  • Salt                                                                             to taste
  • Sugar                                                                          1 tablespoons
  • Cornflour mixed with 1/2 cup water                               3 tablespoons
  • Vinegar                                                                       1 tablespoon
  • Oil                                                                               2 tablespoons
Method

Drain paneer well and cut into square shaped medium size pieces.  Heat sufficient oil in a wok, roll paneer pieces in cornflour and deep fry on medium heat until the edges start turn to brown. Drain on absorbent paper and keep a side.

Heat 2 tablespoons of oil in kadai. Add cabbage, carrot, capsicum, ginger, garlic, green chillies and saute. Add vegetable stock and mix well.

Add salt and sugar in the gravy and mix. Add cornflour mixture and mix, now add vinegar and mix.

Cook still the gravy thickens slightly. Add paneer pieces.

Garnish with spring onion and serve .

A North Indian specialty of roasted brinjals. Every region in india has their own version of baingan bhart. Select large brinjals with a shiny smooth surface as these are more likely to be without many seeds.

Ingredients :


  • Bringals                                                         1 kilogram
  • Onion (chopped)                                             3 medium
  • Tomatoes (chopped)                                       2 medium
  • Ginger                                                           1 tablespoon
  • Garlic                                                            1 tablespoon
  • Red Chilli powder                                            2 tablespoons
  • Garam Masala                                               1 tablespoon
  • Salt                                                                to taste
  • Oil                                                                 2 tablespoons
  • Coriander (chopped)                                        2 tablespoons

Method :

Grease the brinjals with little oil. Roast them over open flame till it is soft. Let them cool. You can cool them by dipping them in water. Remove skin and mashed the pulp completely. 

Heat oil in kadai. Add chopped onion and saute until translucent. Add ginger and garlic paste and cook for a minute. Add chopped tomatoes, red chilli paste and garam masala cook till the oil separates from the masala.

Add mashed bringals and salt and mix well. Cook for few minutes.

Serve hot and garnish with fresh coriander.
